Aviation American Gin was created in 2006 in Portland, Oregon. Christian Krogstad, a distiller, and Ryan Magarian, a bartender, started the company. The first acknowledged distiller/bartender collaboration in the United States was formed by these pioneers. Aviation American is a dry gin made in the United States that is recognised for having a less juniper-forward flavour profile.

They tried approximately 30 different recipes before settling on the one that is currently used. The Aviation, a popular pre-Prohibition drink, was the inspiration for the unique gin. Hugo Ensslin, a well-known bartender, invented the popular cocktail in the early 1900s. Gin, maraschino liqueur, crème de violette, and lemon juice are used to make this famous cocktail.

The distilled gin was originally packaged in a blue-labeled wine bottle. The present bottle is styled like a flask, with a black label and a silver top, and is influenced by the Art Deco period. The recipe is kept a secret by House Spirits Distillery, however seven botanicals are known to be utilised during distillation: juniper, lavender, sweet and bitter orange peel, cardamom, coriander, Indian sarsaparilla, and anise seed.

The small batch gin is pot distilled twice and bottled with a 42 percent alcohol by volume (ABV). The seven different natural botanicals used for flavouring are steeped in grain spirit for 48 hours before being redistilled one batch at a time in a custom-built 400 gallon pot still.

Before bottling, the spirit is brought to proof using deionised Cascade mountain water. Aviation's vibrant flavour is credited to its natural ingredients and low reflux stills, according to Master Distiller Christian Krogstad. It has a subtle, crisp finish thanks to the smooth juniper foundation.
